Here’s a recipe that celebrates whole grains, protein, and seasonal summer produce. A Power Bowl! Start with a grain or legume base, add protein, add a cooked veggie, add some greens, add a topping, and finally add a sauce/dressing. Farro & Farm Veggie Power Bowl

Serving Size: 1 bowl (serves 1)
Bowl Ingredients
Base – ¼ cup quick-cooking farro
Protein – ¾ cup cooked chicken breast (substitute tofu, mushrooms, or other meat of choice)
Cooked Vegetables – 1 cup mixed summer veggies, drizzled with olive oil, seasoned with salt & pepper, and roasted or sauteed (for example, summer squash, zucchini, eggplant, carrots, fennel, green beans)
Greens – 1 cup kale or spinach, washed & chopped thinly
Topping – a few thin slices cucumber or scallions (washed first)
Sauce – Lemon-Herb Vinaigrette (use ¼ of the recipe below)
¼ cup fresh lemon juice
½ cup extra-virgin olive oil
1 teaspoon Dijon mustard
1 teaspoon honey
2 teaspoons fresh rosemary, washed, leaves removed from stems, & finely chopped
2 tablespoons fresh parsley, washed, leaves removed from stems, & finely chopped
1 tablespoon fresh thyme, washed, leaves removed from stems, & finely chopped
1 teaspoon salt
¼ teaspoon ground black pepper
Preparation
First, prepare the vinaigrette: In a small bowl, whisk together all vinaigrette ingredients until well-combined. Set aside.
Then, cook the farro: Combine the farro with ¾ cup water in a saucepan; bring to a boil over high heat; reduce heat to low, cover, & simmer for ten minutes; remove from heat and let stand for 5 minutes; drain off any excess water & fluff with a fork; drizzle with 1 tablespoon vinaigrette.
While farro cooks and stands, drizzle cooked chicken (protein) with about 1tablespoon vinaigrette and allow to marinate for a few minutes.
Finally, assemble the bowl: Into a serving bowl, spoon the farro. Add the marinated chicken and cooked veggies. Sprinkle chopped greens and cucumbers/scallions over the top. Drizzle with a bit more vinaigrette for extra flavor. Enjoy!
