Recipe

1 cup raw cashews (soaked for min. 2 hours)
½- ¾ cups water.
1 ½ tblsp lemon juice
½ tblsp apple cider vinegar
2 tblsp fresh dill
2 cloves garlic
½ tsp salt OR TO YOUR TASTE
Black pepper to taste
Half an English cucumber

Peel and grate your cucumber. Squeeze/ press grated cucumber to remove excess liquid.

Chop the fresh dill and set aside. In a blender combine all other ingredients and blend until smooth. Transfer to a bowl and add grated cucumber and fresh dill. Mix and enjoy!

  3. Do you have alternatives to nuts? If not, that's ok. My daughter is HIGHLY allergic to all nuts except, pecans, pistachios & peanuts.

  4. Javant, what can you use instead of cashews here? Im trying to cut down my fats. Will white beans work in this recipe?

  6. I make this all the time! It's easy and a favorite! I use my tofu press to squeeze out all the cucumber juice to mix instead of water.

  7. a great dip and also suitable over salad. Thanks for sharing how to drink cucumber juice. I recommend my patients to always drink cucumber juice, it is so healthy for the kidneys and to relieve water retention in the legs.
