After the positive and overwhelming responses that I got yesterday on my other post I decided to make a burger and add the cheeses that y’all recommended. I made a doble burger with the classic American cheese that melts without splitting, bacon, caramelized onion, my signature sauce and brioche buns with sesame seeds! I found this combination to be one of the most delicious ones that I’ve ever had.
I’m gonna try all your other recommendations which included adding pineapple and goat cheese!!!
I accompanied my meal with fries (yes, FROZEN fries, idc) and Mac and cheese.

They literally had a whole piece about this in The Menu. Classic American, and anyone who says differently is wrong. There are other cheeses yes, but this is the BEST.
But it has to be fresh deli American, not Kraft.
Fresh mozzarella or cheddar are my goto when making burgers.
There’s American Cheese and American Cheese Food…two different things to be kept in mind. If the each slice in a prepackaged product is separated by plastic or wax paper, it is “cheese food” and to be avoided. Best are the slices from the deli. I also always fold the four corners in on itself to keep the cheese on the meat rather than melting off somewhere.

Cheddar is the best cheese for a cheeseburger.

You can add another cheese for a different flavor, but put the American on top of it to help it melt and maintain the ideal texture.
I tend to go with a mild cheddar.
American “cheese” is just a thick coat of plastic with an “fruity” taste to it, the only thing American has going for it is that it melts very well other than that it’s dogwater.
I turn aged cheddar into American cheese. You get the flavour of the cheddar, the melting of the American, and none of the oil from the separation. Also nice to make blends, cheddar, gruyere, and pecorino into American, amazing.
I just made some with goat’s cheese. That was a whole different flavor. I loved it.
Pepperjack or jalepeno cheddar, provolone or extra aged cheddar also good, almost anything but that tasteless plastic shit Americans call “cheese”.
It’s all a matter of preference. I like the meltiness of American, but my go to is smokehouse cheddar.
