Fresh mint tea (pour hot water over washed leaves), mojitos of course, and extract – you can soak some in everclear or vodka then strain to make an extract that you can use in candies/baking or mixed drinks. We use our extract for a lot of things including chocolate covered mint candies around the holidays.
Peas or beets cooked with mint are amazing too.
You can also let it flower and the bees will love you for it.

Add it to things you normally add fresh herbs to, like pesto, dips, or in salads.
I have an abundance of it every year. Planted it before I knew how aggressive it can be. I nearly wiped it out one year trying to reduce its spread and noticed a drop in polinator sightings. Now I let it take a corner of my herb garden for the bugs it brings in when in bloom

I give most of my mint to my MIL. I have no clue how she manages to use it all but it puts me in her good favor.

Mix with a few tbsp of yoghurt and squeeze half a lemon – a gorgeous salad dressing!!!

Ice cream!!! Mint ice creams are my favorite, particularly a really dark chocolate mint. I usually use two to three times the amount of mint they call for in recipes, which would help you use some of this up for sure 🙂
I also love adding mint to margaritas and other cocktails, and it’s great in savory recipes – any time I make a salad I add chopped mint in there along with other herbs (basil, parsley, lemon balm), and mint is essential to my recipes for tabbouleh, falafel, and other Mediterranean dishes.

You can soak the mint in a glass jar for a month or more, and fill it with alcohol to make mint extract. Use it for crafts, drinks, baking.

You can make basically a mint pesto that is good with lamb.
Keep it from getting into your garden or lawn.
