I leave on the french/spanish frontier and will give you some simple meal preps that you can store more than a week in the fridge and help you get your daily dose of garlic,veggies and olive oil ^

1/ the king of laziness is gaspachooo

Take everything in a blender, add lot of olive oil, a piece of grilled bread, a generous sip of vinaigre or limejuice and its okay for many days in the fridge.
1 big glass a day keeps the doctor away

2/ the queen of laziness is reverse veggie quiche

Thin slice veggies and seeds, mix with genrous olive oil and Spices. Roast that mix in oven. Ad an apareil ( sorry dont know the english word) with eggs and milk, and than apply a strong homemade "pate brisée" made with good complete various flours.

Once cooked it can be stored more than a week

3/ the final boss is " la socca" its like a cheakpea bread with lots of olive oil. Check recipe its easyyyy and very fullfilling

I only turn the oven 1 time a week to be frugal, so i make socca the same time as pies or quiches

  • make lactofermented condiments its easyy and gives a lot of taste without fat

  • make paella it cheap and perfect to.take a portion to job every day

  • The last and the easyyyyest of all is maroccan tajine. Long and slow cooking with only cheap things. You dont need the special plate you can do this in any dutch oven you have. Unlimited recipes.

Dont forget mdt is a way to think your food : cheap things/simplicity/quality/fresh/easy to cook… lots of garlic and olive oil !

    I love socca! You should also make its Indian cousin chilla. Also a chickpea pancake – but thinner with veggies and spices.
