I went out to breakfast with my mom this morning and it was not MD approved. I ate half of my scrambled eggs, I sausage link, 1/2 slice of gluten free toast and ALL of my hash browns. I got hungry later and had a bunch of fruit with 1/4 c of cottage cheese drizzled with a pinch of honey, fresh mint and olive oil, and a salad of micro greens, tomatoes, mozzarella, olives and cannellini beans drizzled with olive oil and a squeeze of lemon juice. Dinner was a leftover enchilada casserole thing with a dollop of Greek yogurt (my husband likes meals) and I knew I needed to bulk up the veggies so I made guacamole with a few fresh veggies and sauteed up some zucchini, onions and bell peppers. I’m really into zucchini cooked this way right now. I couldn’t finish everything on the plate, it was a lot of food.

    Looks delicious!! Just an idea, try julienning the zucchini instead of coins! It cooks better, and eats better imo
