My gf insists on doing this before cooking. Is this weird?

    Your girlfriend is teaching you a lesson. If you want to sear or grill any meat you should *always* dry your proteins first. Surface moisture will steam the meat preventing any browning from occurring.

    Nah, this isn’t weird. If you want a good sear on your steak, this is exactly what you’re supposed to do. Moisture is the enemy of a good sear on a steak.

    I don’t wrap them in paper towels as if they’re pigs in a blanket, but it is a good idea to dry the surface of the steak.

    I know that when you learn about this, it feels like you’re taking the moisture and juiciness out of the steak. You’re not. This will get you a much better sear and it doesn’t make the final product any drier. I learned this fairly late, too.
