My gf insists on doing this before cooking. Is this weird?

Not weird. I pat my steaks dry to get a better sear
blueplanetabove
Nah I do this while I let the steak come to room temp and pat it dry again right before I sear it
Retracnic
Nope, not weird at all. Your gf is on her journey into the sear game.
ExtraCalligrapher565
Your girlfriend is prepping steak properly. Nothing weird about it.
mmcle11
Better sear
dryrubss
Your gf knows what she’s doing, and you have no clue. That’s all.
ArekusandaMagni
Listen to your women, she’s more knowledgeable than you on steak.
Silly_Swan_Swallower
She is smart. You will learn from her.
Based on your post, you have a few things to learn from her about cooking steak. Dryer steak will yield a better sear.
MallSweaty1619
Get like your girlfriend, she’s knowledgeable.
Ludicrous_speed77
She’s the better cook. You can learn a thing or two by asking her questions.

Your gf knows what’s up
Clear-Part-4793
She wears the pants apparently

She knows what’s up

As everyone has stated, she’s doing it correctly and will get a great sear. You’re the girlfriend now, bro. Hand her the tongs, go get a whiteclaw, and start taking notes while she grills.
greybeard33771
Let them sit in the fridge like that for a day. Even better
No-Jello3256
It’s weird that you don’t know why she did this.

Your girlfriend is teaching you a lesson. If you want to sear or grill any meat you should *always* dry your proteins first. Surface moisture will steam the meat preventing any browning from occurring.
damascus1023
patting steak dry reduces moisture, which helps maintaining the pan temperature. It is great for properly developing the crust and let that Maillard reaction continue.
MyFatHamster-
Nah, this isn’t weird. If you want a good sear on your steak, this is exactly what you’re supposed to do. Moisture is the enemy of a good sear on a steak.
nath999
She did it right.
HereForFunAndCookies
I don’t wrap them in paper towels as if they’re pigs in a blanket, but it is a good idea to dry the surface of the steak.
GA_Bookworm_VA
She’s doing it right. Remove the moisture, better sear
Lucky_Cupcake_584
OP hasn’t been back yet he must be somewhere apologizing
Dextrofunk
I know that when you learn about this, it feels like you’re taking the moisture and juiciness out of the steak. You’re not. This will get you a much better sear and it doesn’t make the final product any drier. I learned this fairly late, too.
WantedFun
That is in fact, the correct thing to do. Gotta pat the steaks dry
Fred_Krueger_Jr
Yep, I do this so I’m not steaming my steak on the grill for a better crust.
