My Mother-In-Law has been making this Pineapple Upside Down Cake for over 60 years, and she shared the recipe with me forever ago. Now I’m sharing with with you!

Recipe
1 cup self-rising flour
1/2 cup sugar
1 tsp vanilla
1 egg
1/3 cup vegetable oil
1/2 cup milk

1/2 stick butter
5 handfuls brown sugar
5-6 pineapple rings

Bake at 350 degrees for 36-40 minutes in a 12 inch cast iron skillet. Dump immediately.

  3. Complaint! This was too short! I miss my bi-weekly longer video. If you're vegan, you can substitute many things for the egg in this recipe–including Applesauce (that's right, applesauce; you could also use silken tofu but most people don't have that in their kitchen). It's 1/4 cup applesauce for each egg. You can substitute vegan margarine for the butter.

  7. I’ve made this by using my cake pan. It’s been awhile and is really good but I’m sure it’s better using the cast iron. Yum!

  8. I have been making pineapple upside down cakes for many years – 30 years! Got my recipe from my mother…I grew up eating this cake every festive events throughout these years ! It’s just so delicious & looks so pretty too! Yes, I put cherries in the center of each pineapple slice! Yum in the tum! 😋
