I am loving this sub, and have learned so much! I decided to post a pic of my impromptu dinner at 8pm, when I was hungry and tired. It's not perfect; that's the point! I was hoping to show other newbies like me that it's ok not to have the "perfect" meal; this is better than I would usually eat if it was late, low on groceries and tired.

Please excuse the messy TV table!

1) Fresh grape tomatoes.
2) Left-over, cold garbanzo beans.
3) Canned olives; not great but there.
4) Swiss cheese & Italian salami on crackers; not super healthy but tasty.
5) Artichoke hearts in oil from Costco; pretty good but tried to drain the oil.

This was sodium-laden, I know. This was what was around before a grocery trip. It was also more food than I thought. Next time, I'll increase the fruits and veggies, maybe sub a nice slice of sourdough bread for all the crackers, and add tuna or salmon instead of salami. It's a work in progress. There are so many photos here of meals for inspiration!

    I was going to comment that eating ‘Mediterranen’ focuses on fish, vegetables, fruit, olives and EVOO, beans, pasta, cheese, whole grain bread. Wine is optional. Actually eating close to it for years before I knew it had a name, LOL. My urologist is of Italian ancestry and he said he just ate that way his whole life! We both agree it’s a healthy way to eat.
