1. Amuse – I don’t remember this all that well; the foam item was tomato and vinegar-y, the cracker had some kind of curry-mayo item, the tart was a savory take on cherry / beet as I recall
  2. Another amuse; this was a radish gelee with watercress emulsion; very pure flavors with amazing “fresh” quality to it
  3. Caviar course; actually thin layer of caviar on smoked mashed potato & haddock with crispy, sour cream filled tube. Great.
  4. Langoustine with lemon thyme and onion mango – also very flavorful and sweet, I’m not sure the mango fully worked for me but it was perfectly made and unique.
  5. Candele Macaroni – one the signature dishes; sticky Demi glace and four gras sauce, filled with black truffle and artichoke – massive flavor bomb, although I think this was one of my least favorite dishes of the night, the sauce just seemed over reduced to me personally.
  6. Salmon cooked sous vide with tandoori spices, mint oil, rice vinegar, crispy rice. This was ridiculous, dish of the night for me. Amazing combinations, massive flavor yet so light. Incredible.
  7. Bresse Hen poached in a bladder – also a signature, they bring it out in the inflated bladder first and then take it back to the kitchen to carve. You get two courses from this – the first is the breast with crayfish, chanterelles, Jura wine sauce that they leave on your table under a candle to keep it piping hot and they resauce you halfway into the dish, so cool never seen that but brilliant idea. Another favorite of the night.
  8. The legs from the chicken roasted with verbena oil, and herbs. Great but couldn’t compare with the prior course.
  9. Cheese course – they have a huge cart with maybe 25 selections and they’ll give you whatever you want.
  10. Strawberries – leaves made from meringue, fresh and candied strawberries, cottage cheese foam. This was epic, such intensity of fresh strawberry.
  11. Chocolate espuma – this has shortbread on the base, and was served with chicory ice cream. Amazing

Overall incredible experience – beautiful room, perhaps the best service I’ve ever had, really standout meal. Be forewarned it is a lot of food; I wish I would have paced myself a bit better to enjoy the final chicken courses and dessert.

Overall dinner for two was €1400, with about €450 of that on wine. The dinner itself was €440/pp.
