    Going to do my best to leave a recipe here but I have to be honest i make this from my heart at this point hahah gumbo it’s relatively easy though it just takes patience! The ingredients you will need: butter, flour, chopped onion, garlic, bell pepper and celery, sausage (I recommend zummos if you can get your hands on it), chicken, and chicken broth. And of course Tony Chacheres.

    You want a 1 to 1 ratio of butter to flour for the roux. For a pretty big pot I usually do 2 cups butter and 2 cups flour (this is not a healthy meal but it is delicious hahaha) A lot of people use oil for the roux but I personally prefer butter. The roux will take the longest amount of time of the entire dish. I usually boil my chicken while working on the roux, and will have my veggies pre-chopped so they are ready when I need them. I also slice my sausage and precook it to in a pan, getting a nice char on it.

    On medium heat you want to melt the butter all the way down. Once melted, add your flour and begin whisking. You are going to whisk your butter and flour into almost a paste consistency (not fully a paste but close to it) and continue whisking until it begins to darken. To get a truly dark roux without it burning you can expect to whisk on and off for about 30 min.

    Once I have a dark roux ( about the color of chocolate) I add all my chopped veggies and stir them into the roux until all the veggies are coated in it. Let the veggies get soft in the roux before adding your chicken broth. Add your chicken broth and add your shredded chicken breast as well. Add your sausage and anything else you want in your gumbo. Some people like to add shrimp, hard boiled egg, crawfish, etc. I’m strictly chicken and sausage. Season with Tony chacheres, cayenne, and bay leaves. Let all your ingredients simmer together for at least 30 minutes.
    Serve over rice or with potato salad

    That looks beautiful. I wish I was eating gumbo right now. Have you ever served gumbo with a simple potato and egg salad instead of rice?
