Vegan lentil ‘Shepherd’s pie” Very creamy and tasty dinner 🙂

    Ingredients:

    * 1 cup lentils, cooked
    * 1 onion, chopped
    * 2 cloves garlic, minced
    * 2 carrots, diced
    * 1 cup frozen peas
    * 1 cup vegetable broth
    * 2 tbsp tomato paste
    * 1 tbsp soy sauce
    * 4 cups mashed potatoes (prepared vegan)
    * Salt and pepper to taste
    * 1 tbsp olive oil

    Instructions:

    1. Preheat oven to 375°F (190°C).
    2. Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and carrots until tender.
    3. Stir in lentils, tomato paste, soy sauce, and vegetable broth. Simmer until thickened.
    4. Spread the lentil mixture in a baking dish, top with mashed potatoes.
    5. Bake for 20-25 minutes until golden brown on top. Now Enjoy!
