What does everyone do with sweet peppers? Someone gave me the plants, and they are so prolific!!

What exact variety of eggplants are those?
As for sweet peppers, I slice mine into large chunks then fry about half and bake the other half. I freeze the fried as-is and use as sandwich topping.
They last very long time like that.
The baked ones I puree before I freeze, used in recipes.
I make sure to use about 15-25% green peppers in the mix because I like the taste of green peppers among my sweet peppers.
