That is an excellently cooked blue steak. It MIGHT even be more rare than blue but it’s near impossible to tell from pictures alone because of differences in lighting.
If I ordered a blue steak I would eat it, if I did not order a blu steak I’d ask for it to be cooked a bit longer.

I physically cannot eat that, my body just wouldn’t let that happen. I’d politely ask for it to be cooked longer, so I do not forcefully reject what is likely a pretty good cut of meat.

Don’t forget the Europeans eat steak tartare (raw beef) and Mett (raw pork). This restaurant at least attempted to cook your steak a bit. (Sorry, I’m with Mr. Beans when it comes to raw proteins).

A bit too rare for my liking. I find a medium rare is the most flavorful. I bet the center of that is still room temperature and that doesn’t do much for texture and flavor and any fat probably hasn’t been properly rendered.
I’d still eat it, though.

This looks like Kantyna. A really nice concept but not necessarily the best meat ever. You have to be specific when asking how you want it cooked, and usually ask it a tiny bit more cooked than you would have it normally.
