[Request] what do you do with shredded seitan chicken? Specifically looking for packed lunch ideas

  1. Take some cabbage and carrot and throw together a spicy slaw. Wrap together in some kind of flatbread. Boom, lunch!

    the same you would do with normal chicken…stir fries, wraps, curries, sandwiches, salads, pasta sauce etc.

  3. Start with a pan, chopped onions and butter (of course vegan, not mentioning that got me permad in another sub…). While the onions brown a bit, make rice: about one spoon of peanut oil in a pot, a cup of rice, let it roast a bit, grate one or two carrots into it, or ginger, or both, it’s up to you, and before it burns, add two cups of water. In the meantime, cut other legumes, currently I’m obsessed with zucchini, but whatever your fridge offers, like bell pepper, eggplant, okras…, and add them to the pan together with the seitan strips. And spices, like cayenne pepper if you like it hot. When the rice is ready, add it to the pan, mix everything and roast it a bit more. When it’s ready, eat one portion of it and pack the other three portions in food boxes. One for the next day at work, heat it in the microwave, one in the fridge for in a few days, and the third in the freezer for when you can’t cook because you’re starving.

    I recommend keeping it moist in whatever sauce to keep it from getting rubbery

  5. What’s pictured looks more like Soy Curls than seitan. I thought Soy Curls were TVP?

    Anyway, I would rehydrate them in vegetable broth, or use vegan “chick’un” boullion. Drain them well, refrigerate them, chop them up, and them make them into chick’un salad. Great on a sandwich with some romaine, or with crackers. Super good with swamp crackers, if you’ve ever tried those (saltines seasoned with dry ranch dressing mix and red pepper flakes).

    My favorite thing we’ve done with this is an apple curry chicken salad! Bit of green apple, slivered almonds, golden raisins, curry powder, vegannaise, shallot ACV or other acid. It’s better after a day in the fridge!

    Chicken salad sandwich, chicken Caesar salad, bbq chicken on a bun, peanut thai chicken on noodles, something fast add it to mr. Noodle bowl, fried rice with chicken….its chicken there are so many dishes you can make.

  9. My favourite is putting the chicken in reggae reggae sauce. Let it sit in that sauce on a low heat, covered, for a couple of hours, along with some charred red pepper and some cut up red onion.

    I usually then serve it alongside some kidney beans that have been fried In a little coconut oil, and then mix all that with some rice. Delicious

    Everyone’s ideas sound yum! I’d toss it with crushed ramen noodles, chopped raw bok choy, slivered almonds, chopped onion, a packet of Good Seasons Italian dressing mix (dry), some rice vinegar, some olive oil, S&P. You can adjust ingredients to taste but that’s the basic recipe. It rocks after a night in the fridge.

    I think Whole Foods makes their vegan chicken salad with that. So good!
