Try roasting the eggplant, by removing the green hat and then Slicing it lengthwise. Then coat the eggplant slices with oil add seasonings of your choice and roast in the oven at 400 F till fork tender for about 25-30 minutes.
I slice my eggplant and zucchini on a mandolin, marinade with olive oil, basaltic vinegar, diced garlic/garlic powder, and salt and pepper. Grill till tender.
Make a sandwich with the grilled veg, some caramelized onions, my homemade pizza/pasta sauce (chunky red sauce with no sugar), chèvre, and some shredded Parmesan. I prefer rustic bread with chunks of garlic in it, but there’s lots of good options. Just toast the bread or it’ll get soggy super fast.
Slow cooker eggplant caponata is delicious. I like to make a curry spread with eggplant as well. Cube the eggplant, toss it with salt, leave in a colander to drain. Meanwhile sauté some minced onion & garlic. Add yellow curry powder and cook to bloom spices. Squeeze eggplant to remove as much liquid as possible, then add to onion curry mixture and cook for a few minutes. Add coconut milk and simmer until eggplant is very soft, mashing as it cooks. (You can blend it if you want a more smooth texture.) I eat it on rice, or any bread product or chip/cracker or veggies.

My cucumbers were giving me 2 every other day but a storm came through and blew them over (they were growing vertically) and i lost 3 plants but the other 9 have slowed down hopefully they will be back to normal soon
Eggplants if you cook tĥem they need parsley garlic olive oil and not a lot of water,onion tomatoe paste you can also fry then some salt put some flour and fry them

After that add your eggplant meat and fry with the spice mix untill smooth and creamy texture. Now enjoy with rice or roti or bread.🙂

Special mention to tortang talong, a Filipino eggplant dish that's kinda like an omelet and dipped into a delicious fish sauce and vinegar sauce.
I'm Algerian and these recipes are always a hit at home for adults and children !
Filipino kare kare! It made me fall in love with eggplants. My MIL makes it with collard greens and oxtail, but I wouldn’t mind if it only had eggplant . It does require a trip to an Asian market. You don’t need a lot of ingredients and majority of the ingredients can be purchased at any supermarket. However 2 specific paste/seasoning packets are necessary. But 10/10 kare kare a Filipino peanut butter stew
If you make eggplant Parm, thats pretty tasty. Like chicken parmesan but with eggplant instead. Slice in half long ways, roast with italian herbs (parsley, basil, oregano, rosemary, thyme, marjoram), salt, pepper, and olive oil until the egglplants have darkened considerably and are soft. Make a nice marinara sauce, and cook some linguini up. Then, put s little marinara on your eggplant slices, cover eith mozzarella and Parmesan cheese, toss in the oven again under the broiler setting, and then put the eggplant on top of your pasta after youve covered the pasta with marinara and Parmesan. 10/10 meal
How do you get your green pepper to grow? This will be my second year and they didn't grow large and I got two pepper . Both rotten. Thoses eggplant ,never had before. I wonder if you can make eggplant premasine with them??
Slit the eggplant into 4(they should be together at the top)..scoop out the seeds with the help of a spoon.make a thick pest of turmeric powder,red chilli powder,cummin powder,coriander powder,gerlic pest,salt and little oil..put the pest inside the eggplant one by one..then close the eggplant with thread and make a knot..and shallow fry the eggplants.have it with anything rice or roti or nun anything.

Stuff those banana peppers and either fry them or cover in tomato sauce and cheese and bake, maybe top with panko for a crunchy top

The only way I like eggplant is breaded with panko and pan fried. If not cooked right it tends to be soggy. My opinion only.
