Sunday morning breakfast! First picture is finished oatmeal, second picture is before I mixed and added the strawberries.

Half of a ripe mashed banana was enough to sweeten one serving of oatmeal without extra sugar (besides the little bit in the vanilla paste).

My partner had his oatmeal topped with walnut pieces, vanilla paste, and a bit of panela (AKA unrefined evaporated cane juice, similar in flavor to brown sugar)

My base recipe for oatmeal for two people is 105g steel-cut oats, 490g water, 3/8 tsp diamond kosher salt (use about half that if using table salt). Bring to a gentle boil, then lower heat to a simmer, stirring every couple minutes until water is absorbed and oats are tender (maybe 20-30 minutes). I tend to keep lowering the heat more and more as the oatmeal thickens.
