    My new way to eat eggs:
    – grease an 8” round aluminum pan
    – fill it to the top with chopped veggies (I did chopped fork tender boiled potato, sautéed mushrooms and spinach, red bell pepper, jalapeño, tomatoes, misc seasonings)
    – fill with a blended egg mixture (3 whole eggs, ~half cup egg whites, 1/2 cup low fat cottage cheese)
    – bake at 350 for 25 minutes or until center reads 175 degrees
    – slice into 6ths, cool, and put in the fridge

    Not only does it look and sound delicious, but the cook once, eat all week aspect is fire!
