Fried rice has become one of my favourite quick dinners

    ## Recipe

    Serving size: 2 people

    ### INGREDIENTS
    – 2 portions day-old (but stored properly in fridge) boiled basmati rice (100-120g dry uncooked weight)
    – 1 medium – large onion
    – 1 medium – large carrot
    – 2 spring onions
    – 0.5 tsp Chinese 5 spice
    – 1 tbsp dark soy sauce
    – 1 tbsp garlic ginger paste
    – 2 eggs
    – 1 handful frozen peas
    – 1 splash Sesame oil
    – Any other random veggies I have to hand (e.g. a bell pepper or some beansprouts)

    ### METHOD
    – Break up all the clumps of the rice.
    – Dice the onion and carrot. Slice the spring onions and cube any other veggies.
    – Heat a dash of vegetable oil in a frying pan.
    – Quickly scramble the eggs, breaking them up (shake the pan and scramble with a wooden spoon). Take the eggs back out.
    – Next, in some vegetable oil on high heat, fry the onion and carrot (adding a pinch of salt) for around 5 mins before adding the garlic and ginger and the white bits of the spring onions. Keep frying for another 5 mins or so until the carrot and onion are soft enough for your taste.
    – Add the frozen peas at this point.
    – Add a splash of sesame oil to the pan with the veg, add the Chinese 5 spice, soy sauce, and if you have some 1/2 tsp of MSG.
    – Stir it up and then add the rice.
    – Fry the rice until it’s very hot.
    – Add the egg back in, toss and then serve with the green bits of spring onions on top.

    This looks so delicious! I’ve got rice I cooked today in the fridge, I made chow mein which is incredible, I’m going to use the excess rice and make this!

    Hey with the day old rice in the fridge, do you leave it uncovered in there or covered?
