Makes 2.5 cups
26 g chiles de arbol after stems removed
520 g vine tomatoes
34 g white onion
12 g garlic
8 g salt
320 g water

Remove stems from chile de arbol. Put in a small pot of water and bring to a boil. Remove from heat and let soak for 10 minutes.

Cut tomatoes in quarters

Fry tomatoes and onion for 6 minutes turning everything over every couple minutes

Remove onion and add garlic, cook for 3 minutes

Remove from heat

Remove skins from tomatoes

Add everything to blender with salt and water and blend well

Pour through strainer into bowl, strain twice
