Ingredients:
150g high-quality butter
50g powdered sugar (or 1/2 cup)
4 tbsp vegetable oil
1 medium egg
2 tbsp roasted flour
A pinch of salt
Vanilla extract
1/2 tsp baking powder
About 250g all-purpose flour (adjust as needed)

Notes:
⭐Only half of the ingredients listed were used ; you can double them if you want to make more cookies.
⭐Use butter with less milk content for better texture, like what’s used in bakeries.
⭐Avoid overworking the dough as it can affect the cookie texture.
⭐A silicone baking mat gives a nice shape but isn’t necessary.
⭐Chill the dough before rolling it out for best results.
⭐Do not over-flour the dough; it should remain slightly moist. Adding too much flour can cause the cookies to dry out.

For the Jam Filling:
1 cup apricot jam (or any fruit jam of your choice)
2 tbsp sugar

Cook the jam with sugar for about 15 minutes until it thickens. Let it cool before using.
