You buy the chicken kit from the Elmhurst website. You have to use an immersion blender. It's hemp protein flour that you mix with water, oil, and spices. Only takes a couple minutes in the microwave to solidify it, then you can brown it on the stove or do whatever you want with it. It is very dense and I recommend adding a sauce since it's a little dry on its own. I served over pasta with arugula and jar vegan alfredo sauce.

    It’s an interesting idea but I’ll just be honest and say that this doesn’t look super appetizing to me personally.

    I will admit that I also am mildly frustrated with this current obsession with “clean labels” and “small ingredient lists”. In my experience, # of ingredients has never been a complaint I’ve heard from people regarding mock meats.

    It always comes down to taste and price. I feel that the push to have minimalist ingredient lists doesn’t really address people’s issues, adds another unnecessary constraint to development of better mock meats, and cedes ground to all the bad faith propaganda that more ingredients somehow = bad or unhealthy.

    There is definitely a market of plant based eaters for whom the short-ingredient-list approach might be appealing, but then again won’t those consumers mostly be eating whole food plant based anyway and just stick to their beans & whole grains?

    Feel free to disagree if I’m off the mark or the stuff actually tastes incredible!
