How to make CAPONATA

The Sicilian cuisine has its roots in the poor tradition, based above all on some typical ingredients such as eggplant, the undisputed protagonists of caponata. Already common to other typical recipes, such as pasta alla norma and Eggplant parmigiana, together with basil and tomato they create a mix of aromas, colours and flavours that recall the suggestions of a splendid land.

There are a thousand versions of caponata, each family has its own.

-2 Eggplant
-1 Onion
-150g Green Olives
-50g Capers
-600g Tomato Puree
-Celery
-Vinegar
-Sugar
