Homemade pesto, tomatoes and ricotta on toast

    60g pine nuts, toasted

    100g fresh basil

    60g parmesan

    150ml olive oil, plus extra for cooking tomatoes

    2 garlic cloves

    sourdough

    cherry tomatoes

    ricotta

    1/2 lemon, juiced

    Directions

    Step 1

    Toast your pine nuts in a dry pan over a low heat

    Step 2

    Put your basil, parmesan, lemon juice, olive oil, pine nuts and garlic cloves into a blender and blitz until smooth

    Step 3

    Add your tomatoes into a pan with olive oil and cook until soft and the skin begins to brown

    Step 4

    Toast your sourdough, and add your ricotta, tomatoes and pesto.
