Let’s make Salade Nicoise

1 cup boiled small potatoes
1 cup blanched green beans
3 hard boiled eggs, halved
1 cup cherry tomatoes, halved
½ cup Kalamata olives, pitted and halved
2 tablespoons capers, drained
1 tin anchovies, drained
2 cans whole tuna in oil, drained
Lemon Vinaigrette, for drizzling
2 tablespoons chopped parsley
Flaky sea salt
Freshly ground black pepper

Lemon Vinaigrette
2 tablespoons finely diced shallots
2 tablespoons Dijon mustard
1/4 cup Olive Oil
(mix above first, then add below)
2 tablespoons white vinegar
Zest of one lemon
Juice of one lemon
Salt & Pepper to taste
