Fantastic dish.

I added a few roasted tomatillos and hatch chilis to the sauce, and made my pesto with pistachios instead of pine nuts. Also opted for steak instead of diced guanciale. Really a fantastic use of chilis that I never would have considered myself. Many props to u/Winter-Pumpkin2127
