I take the bone out and roast them to make stock for arguably the best french onion soup you’ll ever have. Cooking the steak bone in is a huge waste of a beautiful resource.

The reason they don’t get enough respect is because they’re extremely difficult to cook. The Filet and NY Strip come to temperature at different rates and unless the stars align, on both the cut along the loin and the cook, half the steak is going to be a little off. I’ve always wanted to do a short loin roast but I know I’m going to end up ruining part of an expensive cut of meat.

Disregarding that one is actually a porterhouse, very nice job on the sear and grill marks.
Too many times I see posts with perfectly angled, strong grill marks on an otherwise grey steak. Personally I think grill marks are overrated, but if you can get some nice color with the grill marks, angled nicely like you have, you get amazing steaks like you have here.
