I'm so proud, I can just explode! This is THE BEST BREAD I HAVE EVER HAD!

I tried making a starter last year, but it just didn't become extremely active. I tried every trick in the book, but it just wouldn't rise like it should. I eventually gave up and discarded it all and started baking with yeast.

This year someone gave me some of her starter and said "no tap water! No borehole water! Only bottled water" and there she just solved my problem. After endless struggles and endless reading, the solution came from her. Now, using bottled water when feeding my starter, she is amazing! If I feed her borehole water, she is timid.

Maybe this advice helps someone out there. No article or youtube video on "why your starer wont work" spoke about the type of water. The minerals in borehole water can have a major effect.

    Looks brilliant! Both your crust and crumb look spot on for my liking. Keep going with your baking. There are so many things you can do with sourdough. Scoring, flavours, additions, changing flours, enriching dough. Or even just perfecting a simple loaf. Enjoy!
