    Look at the gradient. Different levels of doneness with the middle being raw. This means the steak was cold when they cooked it.

    this is why i prefer to eat steaks at home, that’s rare and has almost no crust, you probably payed a shitton of money for it too

    That’s blue enough to moo. That’s how I’d order it but it is definitely not medium rare.

    cooked poorly. massive greyband and hyper rare middle. i would not return to a place that served that. i also dont go out for steak anymore as i can cook better than ANY steak i have ever had at a restaurant since i bought a sous vide

    I would’ve sent that back. One of those pieces is football shaped. It was cooked unevenly due to being cold rather than properly thawed. When a cold steak hits the hot grill, the exterior cooks faster and contracts unevenly, causing it to warp

    That is rare but the look of it, though if the center is warm it’s medium rare. Perhaps a sous vide could prevent the outer part of the meat from turning pink while having a warm red center…. But I don’t think so.
