    Looks delicious. The sear looks rustic and authentic. Did you butterfly it yourself? I’ve only had the leg roasted or smoked, but it makes a good steak? Is it tender? Might have to try this.

    I’m a fan of it on the grill coated in Dijon, salt and pepper. Learned that Dijon coating a while ago and just love the flavor it gives off a flame.

    Steak’s original meaning was not just beef. But a thick slice of meat. Pork steak, goat steak, lamb steak, ox steak, horse steak, kangaroo steak. Those were all things (some still are).

  21. How chewy was it? As someone who eats a lot of lamb, that fat really could have benefited from a long sous vide or reverse sear.
