I intended to make a salmon niçoise for dinner. I had prepped some things yesterday. But after a long trip and some jet lag – while I did a good job of meal prep over the weekend – Monday came with a dishwasher to empty. Some pots to wash from lunch. And a half a sink of hand wash items.

I started prepping dinner. And my potatoes were just about done and I realized I forgot the eggs. But I was ready to eat!

So we have salmon, a really thin salmon scrap so I didn’t get good char. Some air fryer roasted fingerling potatoes with thyme, salt, pepper, and olive oil. The last of my olives. Some capers. A mix of lettuces – including half that came from my Aerogarden! Green beans. Tomatoes. And a homemade vinaigrette. And some chopped parsley to serve. Still tasty without the egg.

    That looks very good. Did you do red wine vinegar and oil as a dressing?
