I have had the same Fleischman jar since 2016. It replaced the one I bought in 1999 but I dropped it and it shattered.
I keep refilling the glass jar from the 2lb bag of Red Star.

I don’t know man. I know yeast is a living thing, but I have a jar significantly past the expiration date that foams up just fine every time I test it.

that’s best by date. not an expiration date. meaning the product is probably good by that date. If you dump it in water with a bit of sugar and it still foams (proofing the yeast). its fine.
People keep start dough for decades and that’s actually in a wet environment. The yeast literally prevents bad things from growing (not 100% guaranteed though, start dough can still go bad).
That’s when experience knowing what’s gone bad and what hasn’t comes into play. You know before best by/expiration dates started. Its mainly a marketing ploy to make people buy more stuff, not completely though since things do go bad.
