This is my bigoli in salsa. a simple typical dish of Venice. bigoli are a very large fresh pasta that requires quite a long cooking time. for the rest, two ingredients are enough: lots of white onion and salted anchovies. the onions should be cut very thin and cooked for almost an hour with clean anchovies.
The result will be a very tasty sauce that leaves a sweet aftertaste.
For two persons: 2 onions and 100g of salted anchovies.

    That looks absolutely delicious, but could you explain why a fresh pasta would require a long cooking time? I’m not familiar with bigoli.
