    I just started learning about bread and instead of getting into what 80% hydration means for dough, I’m going comment that the little love tap at the end triggered something. I’m not sure what but my insides tingled.

    Tried 80% many times and when it comes to fruition it’s marvelous but there are many more times it ain’t & they’re frisbees that taste pretty good. Back to my 75% that always develops a good rise.
