Man, I just can’t get into prime rib. If I can choose between a sear/grill finish on my ribeye and slow roasted, I’ll always take the former. Prime rib gives me sou vide without the sear kinda vibes. Yes, there is a roasted sear on the outside, but off the grille you get 100% sear coverage, instead of just the “crust” sear.
Sorry if this is an unpopular opinion, I’m just curious if I’m on an island with these thoughts?

It’s always been odd to me that ribeyes are my go to cut of beef… but im typically not a fan of prime rib. I guess it’s just the texture difference with how they are prepared that dissuades me
