Recipe for the poolish:
– Water: 150 ml
– Dry yeast: 3 g
– Honey: 3 g
– Flour: 150 g (preferably 00 flour, but regular flour works too)

Recipe for this pizza dough:
– Water: 350 ml
– Poolish (prepared the day before)
– Flour: 600 g (preferably 00 flour, but regular flour works too)
– Salt: 20 g
– Olive oil (for oiling and topping)

Ingredients for Margherita Pizza:
– Tomato sauce: 4-5 tablespoons
– Fresh mozzarella: 125 g, sliced
– Fresh basil leaves
– Olive oil (to drizzle and brush the crust)
– Optional: Grated Parmesan cheese for extra flavor

Steps:
1. Mix water, yeast, and honey. Stir until dissolved.
2. Add flour and mix well to form the poolish. Let it rest for 1 hour at room temperature, then refrigerate for 24 hours.
3. Prepare the dough with water, poolish, and flour. Add salt and mix thoroughly. Knead by hand until smooth.
4. Divide the dough into 5 balls, let them rest covered at room temperature for 2 hours.
5. Stretch the dough, keeping the top side up. Add toppings of your choice, and bake initially with tomato sauce only.
6. Add your favorite ingredients and bake again until perfectly done.

Finishing Touches:
Add fresh basil and enjoy the perfect bite!
