for me the non-mayo steak (shown) was better. grilled over post oak briquettes and pecan wood chunks.

    Maybe use better mayo next time? Dukes is too greasy. Kewpie and Hellman’s or homemade with avocado oil for the win.

    I use mayo all the time when marinating chicken breast. Makes it super juicy and cook great. Haven’t tired it on steak though.

  9. Interesting as others have said I’ve seen this method for grilled cheese and when grilling fish. I’ve tried both with good success haven’t tried it yet with steak. Might have to give it a try here soon.

    I think Guga tried this on his channel a few years ago. Said it was different than the results with butter or oil but not really better or worse if I can remember correctly.

  13. Never seen it done with steak.. I’d much rather stick to butter or duck fat.

    I have done it with bbq a few times though. Makes a great binder for brisket seasoning.

    Theres a vid of Guga Foods cooking steaks in condiments and he baked a steak in mayo then seared it, thats how youre supposed to do it not just use it as a binder

    Nooo 🤢 It doesn’t *look* bad, but just knowing that my steak was slathered in mayonnaise before being cooked makes my stomach upset. Just not a mayo fan here.

    Mayo is just oil and eggs. Pretty solid cooking fat alternative in a lot of cooking situations.

    I made Chilean Chacarero steak sandwiches using arrachera. The recipe called for slathering the meat with mayonnaise mixed with stuff before grilling quickly.

    It worked a great on something thin that gets grilled briefly.

    You should try using sour cream. I marinate my chicken in it when I pan fry and it adds a little something and helps keep it moist

    Never understood the Mayo over oil or butter trend. Especially w grilled cheese/toasted sandwiches. To me, hot Mayo smells like wet dog. And butter destroys it on the flavor test. The browning is the same.

  25. Gotta say, I love me some Duke’s. But I started making my own mayo… IT, PHO-CKS!!!! SO damn good and easy as hell. Added a bit extra lemon juice and that shit SLAPS!!! Immersion blender is the key, along with safflower oil for neutral flavor.

  29. From my experience, the mayo works best when done on a cast iron…. Not on the grill. Sous vide then follow with mayo crust in cast iron is 🔥

    I was put on to mayo for making grilled cheeses instead of butter and it hits way better I’d imagine something similar w steak cuz you can get a more even spread
