for me the non-mayo steak (shown) was better. grilled over post oak briquettes and pecan wood chunks.

Interesting as others have said I’ve seen this method for grilled cheese and when grilling fish. I’ve tried both with good success haven’t tried it yet with steak. Might have to give it a try here soon.

Theres a vid of Guga Foods cooking steaks in condiments and he baked a steak in mayo then seared it, thats how youre supposed to do it not just use it as a binder

I made Chilean Chacarero steak sandwiches using arrachera. The recipe called for slathering the meat with mayonnaise mixed with stuff before grilling quickly.
It worked a great on something thin that gets grilled briefly.

Never understood the Mayo over oil or butter trend. Especially w grilled cheese/toasted sandwiches. To me, hot Mayo smells like wet dog. And butter destroys it on the flavor test. The browning is the same.

Gotta say, I love me some Duke’s. But I started making my own mayo… IT, PHO-CKS!!!! SO damn good and easy as hell. Added a bit extra lemon juice and that shit SLAPS!!! Immersion blender is the key, along with safflower oil for neutral flavor.
