Episode 70: This is my Mama’s recipe for her authentic Slovenian Cherry Strudel. Mama’s homemade dough stretches out so thin, you will feel like a professional baker. Plus, this delicious cherry filling will have your tastebuds doing the polka. Dober tek!!

Cherry Filling
1 + 1/2 pounds frozen pitted sour cherries ( or 2 pounds fresh, pitted)
• 1 cup granulated white sugar
• 1/4 cup corn starch
• 1/2 lemon, zested (optional)
• 4 ounces butter, melted
• 1/2 cup bread crumbs or graham crumbs (I love using graham crumbs)
• pinch of salt
• 1 -2 packages of vanilla sugar (Dr Oetker)

1. Place cherries into a bowl and add sugar. Toss. Set aside and allow to sit for about 30 minutes. After 30 minutes drain the cherries and reserve the juice for later. Set drained cherries aside.

2. In a small bowl add 1/2 cup of cherry juice with 1/4 cup of cornstarch. Mix until well combined and smooth. Set aside.

3. Place remaining juice and pinch of salt into a saucepan and bring it to a boil. Lower the heat down to a medium-low temperature and slowly whisk in the cornstarch-cherry juice mixture. Pour in a steady continuous motion. Keep mixing and stirring until you reach a slow boil and the mixture turns into a nice consistency. Remove from heat. Pour over the pitted cherries. Mix all together until well combined. Set aside.

4. Stretch out homemade strudel dough (Strudel dough recipe below). Using a pastry brush drizzle on the melted butter. Next, sprinkle on bread crumbs or graham crumbs. Add cherries over the crumbs. If you are adding the lemon zest you would do this now. Lastly, sprinkle the vanilla sugar on top. Roll up the dough.

5. Bake in a 350 degree oven for about 45 minutes.

*if baking from frozen: Bake in a 375 degree oven for 45 minutes.

6. Sprinkle the top with icing sugar. Serve. Dober tek!

Strudel Dough Recipe
‣ 4 cups sifted unbleached all purpose flour. Set bowl aside.

In a separate bowl we will add:
‣ 12 oz luke warm water ‣ 1 egg ‣ 1 tsp salt ‣ 2 Tbsp’s oil ‣ 2 Tbsp’s white vinegar

1. Mix together until well combined. Set aside.

2. Add the wet ingredients to the bowl with the flour.

3. Mix by hand on a work bench or with the dough hook of a stand mixer for about 10 minutes. Adding flour 1 tablespoon at a time, only if needed.

4. Add 2 Tablespoon’s of oil to a bowl. Place dough ball into the bowl, roll the dough around in the oil. Cover with clear plastic wrap. Let dough rest on the counter for 2 hours.
