I’m staying at my parents house in between moves, and was asked to whip up some loaves for a party. I made a double recipe (1000 g flour, 650 g water, 100 g starter, 20g salt), fermentylese for 30 min, 4 sets of S&F for 30-45 min between each one, and then just let it BF until I thought it was done (jiggly, airy, bubbly, roughly 12 hours in a 70 deg basement). Preshape for 20 min, then final shape and into the fridge overnight. Bake at 450 for 25 min, remove lid and bake at 400 for another 25 min. Probably one of my most “casual” loaves in terms of what I had available (pretty much no tools besides a scale), but they ended up coming out great!!
