Stayed over night and had a lovely breakfast. Came with a drink pairing that’s not pictured. Cold brew with rhubarb syrup, local roasted chemex pour over, low abv sparkling cider, lilac syrup juice. Most if not all of their ingredients are sourced locally or from the Nordic regions.
Order of dishes is backwards.
Sweets: crème brûlée with Madeline’s.
Bread: sourdough from a starter since inception (6 years) with chicken liver pate, herb butter
Yogurt: with cloudberries and granola on a tart
Egg: chestnut shards and creamy egg soufflé
Croque madame: locally raised pork
Porridge: savory oats with ponzu and a tomato sorbet
Caviar: potato pancakes with cheese and caviar / chives (my favorite dish of breakfast!)

I visited a few weeks ago and was really impressed with the breakfast. The venue is amazing of course but I wasn’t overwhelmed by the dinner. Solid one star dinner but looking at the dinner in isolation nothing really stood out. I was also quite hungry after dinner and really missed having a solid “main” course. We had mostly light fish dishes and I think I missed a good meat dish with a nice red wine mostly. Again, solid 3/5 for a single michelin restaurant (and 5/5 for the venue and rooms with your own little swim spot) but I wouldn’t go back solely for the food given how many good options are available in the Nordics.
