I tried to make a farinata inspired by this post:

I added a tomato, some red onion, Trader Joe’s sofrito spice blend, and some grated zucchini. Of course evoo, salt, pepper, and a little cayenne. It was good but I forgot to grease the pan so it was tricker to remove. It ended up being moist and tasty. Will grease the pan or use parchment next time.
Dinner was full of TJs pantry items: the scallops were seasoned with the Ajika spice blend from TJs and seared in a mix of avocado oil and butter. The sides are TJs 10 min farro tossed with sautéed zucchini, lemon zest, lemon juice, garlic scapes, evoo, mint, sumac, salt, and pepper. The snap peas were blanched, and I made a dressing with ginger, lime zest and juice, more garlic scapes, salt, pepper and a Fresno chili (it wasn’t hot at all). And evoo. It was fresh and summery.
