I pan seared and finished off in the oven to 135 F. I feel like it came out undercooked though? How does it look? Perhaps my thermometer is off.

    Looks like a perfect medium, bordering on medium well… if anything, you could’ve cooked it less! Filet’s are considered best MR-MED. Any less, it might be too chewy. Any more, too tough. Great job

    Not at all. On the contrary, to my taste it is overcooked. But I am all for balck/blue – and I still think it looks delicious!

    Nah that’s the sweet spot – a fattier cut I don’t mind medium cooked if it comes out that, a rib eye can survive a bit more cooking but you want these just like that.

  6. Looks great! Excellent job. Ultimately, as long as you enjoy it and the meat doesn’t go to waste, that’s all that truly matters.

    Not undercooked: a beautiful steak many would call perfection. In my opinion, you could’ve ran a higher heat. The inside looks great but the outside would’ve locked in more flavor with a hard sear
