-Roasted Japanese sweet potatoes: Peel 4 Japanese sweet potatoes and cut into 1-inch cubes. Toss in 2 tablespoons of avocado oil, 2 teaspoons smoked paprika, 1 teaspoon garlic powder, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Toss to coat, transfer to a parchment lined sheet pan, and bake on 400F for 35 to 45 minutes, tossing halfway through, or until browned on the outside. Let cool completely on the sheet pan before storing.

  1. I did the $50 Trader Joe's dinner week last week and they were THE BEST meals we've had in a long time. We saved so much money, used everything, my husband loved it, and it made me feel so confident in cooking for the first time in my entire life. I watch a lot of meal prep videos, but your video was the only one that's actually worked for us. I can't wait for more of these!!
