Nourishing Buddha Bowl for lunch today

This ended up being so much more then I intended it to be. But it was so good!

Bottom, clockwise:

Cherry Tomatoes

Roasted Butternut squash

Grain mix (every couple of weeks I make a large batch of a grain & legume mix and freeze in 50g portions to pull out and use in whatever. This mix was quinoa, wheat berries, barley, speckled lentils and wild rice)

Riceberry rice

Chopped Almond, Walnuts & Pepitas

Spinach & Kale with green onion, sliced mini-pepper and Shallot

A few Blueberries

Slop (lol, Roasted Eggplant mixed with Red Pepper Hummus, Tzatziki & Diced Green Chillies)

Cooked Beets

Lentil Fritters (Made last night. Food Processed/Chopped up some Fresh Corn, Mushrooms, Black Lentils, Goat cheese, Jalapeno, egg whites, spices & Lupin flour. Formed into patties and then Air fried)

I used the “Slop” as my dressing, plus some fresh squeezed lemon and a tablespoon of Jalapeno Mango White Balsamic.
