First time posting here, long time lurker, was a cook for about 8 years. It was my first time having steaks of anywhere close to this quality which made me nervous. My roommates like it a bit chewier than myself, I so I went for 129 instead of my regular 132. I think I didn't render a couple of the fat caps enough, I don't know if that's picked up in all the pictures. What do you guys think?
