    Good job on your first butt! She may be a lil dark for some folks, next time if you wanna switch things up you can wrap the protein about 4-7 hours in and let the internals catch up to the bark without compromising color or juiciness.

    Nice bark. For best results you want 203° inteternal tent it for 20-30 mins it will get to 107° – 210° then shred it.

    Stop smoking pork butts at 225! If you did this at 275 it would be done in probably half the time.
