OLD SCHOOL LOBSTER MAC AND CHEESE
This such a comforting dish to enjoy any time of the year
OLD SCHOOL MACARONI AND CHEESE RECIPE
Cook 1# of mac pasta in salted water
FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
add 1 cup of roux(flour and melted butter) and add to hot milk mixture and cook until thickened
Add
8oz cup cream cheese
8oz cup Velveeta cheese
8oz cup jack cheese
12 oz mild cheddar cheese
8 oz chopped lobster meat
1 sleeve ritz crackers
4 oz melted butter
Add to thickened milk mixture and incorporate completely
Add cheese sauce to cooked mac pasta,fold in lobster meat and pour in baking dish
Top with ritz crackers and butter mixture and bake in oven for 20-30 minutes until golden brown
