300 g flour (mix of different danish flours)
225 g water
100 g unfed starter straight from the fridge
6 g salt

Did one round S&F and then 4 rounds of CF in approximately 3 hours. BF for another 2 hours, then shaping and resting for one hour in loaf pan. Baked on 200 C for 50 minutes.

Before this bake I had never tried baking with unfed starter (at least three weeks since last feeding), not following a recipe but listening to my gut feeling, baking in a loaf pan, doing same day bakes without cold proofing, or baking at lower temperatures. But I will definitely be doing this again.

    I’m all for ditching recipes and following your gut!! Even new bakers in my opinion should, no way to build confidence if you aren’t trying 😊
