I’m new to Spain and saw a cut of pork I’ve never come across before. Any thoughts on how to prepare it? I don’t have a grill, fyi.

    I would marinate and cut thinly for some bomb tacos

    That’s a really good cut of pork, usually salt pepper and grilled like a steak. Super tender, lean, etc cook to 130°f and rest to 135°f
