Today I made roasted veggies and some herby chicken meatballs.

  1. Roasted purple cauliflower
  2. Roasted eggplant (mmm char!)
  3. Roasted sweet potatoes
  4. Chicken meatballs
  5. Lazy chimichurri inspired sauce.

The veggies all got my all-purpose seasoning blend that has smoked paprika, onion powder, garlic powder, and some cayenne. They were also tossed with olive oil and salt.

The fake chimichurri was made with some mint, cilantro, a large scallion, a Serrano pepper, olive oil, white wine vinegar, and some of my habanero pepper vinegar for extra heat. I blended it up to be lazy.

The chicken meatballs had a paste of mint, onions, cilantro, scallions, garlic scapes, Serrano peppers, and a Fresno chili. I added a spice blend called « eastern Mediterranean » with some garlic powder, salt, and egg, and chickpea flour. Since I pre-prepped the paste yesterday it has a little more moisture than expected. I could have added a little more chickpea flour. But this kept the meatballs very tender and they will reheat well. I made these in the air fryer.

It all turned out really tasty.
